Went to Bubas BBQ satruday night
I went to Bubas for the first time and to be honest it wasnt what I thought it would be. Anyone else care to comment. It didnt taste like the real eastern style I know.

I went there too a few years ago. I did not care for it all. a local had recommended it. I guess its what you are use too. I go to the lancaster bbq in Mooresville.

It's a "pretend" BBQ chain restaurant. If you are looking for authentic, you won't find it there.

Actually, Bubba's isn't a chain.
The biggest problem with Bubba's is unfortunately a problem with many of the bbq places -- they don't cook with wood and/or hardwood coals. Many places have switched over to gas or electicity because it's so much easier.
But the taste, texture, and smell just aren't the same.
My understanding is that the switch to gas and electricity is more common in the eastern part of the state than the Piedmont. So in this respect, Bubba's is actually more like Eastern NC style as so many of those places have converted to gas and electricity.

I haven't been in a few years but the few times I tried it I was not impressed. My parents are from Down East. I know what eastern BBQ taste like and Bubba's isn't close.

I have heard from some of my BBQ professional friends that Lancasters is pretty descent. My friends make their own Carolina BBQ and one does livermush as a passtime. As far a Bubba's. I have been twice. The first time it was good, the second time it wasn't. It is my personal opinion that one has to travel outside of Charlotte to get the good stuff.

We talked with the owner in general conversation and mentioned I ate at Bill Ellis BBQ every time I went to ECU so he knew I knew his BBQ wasnt the real eastern style. Friendly guy but they place had very few customers

I thought it was an independent restaurant. There are other Bubbas?
