Cable internet should be available no matter where you are in eastern TN. The only exception I could think of would be Johnson county (not Johnson City), which is quite remote, but even they might have it now.
Knoxville and Chattanooga definitely have cable (as well as their offshoots, ie Maryville). The tricities and surrounds (Erwin, Greeneville, Morristown) do as well.

Can you post the name of the cable companies there that offer high speed internet?

It's far too complicated. Some companies only operate within city limits, with a completely different company in the outlying areas.
Here's one website that will let you plug in an address and then you can see who offers what.
If you don't have an actual address, google the local library of that town, get their address, and plug it into the website.

One of the larger providers in northeast was Adelphia, but now I believe they are in the process of being bought out by Time Warner.

No. Adelphia went out of business and Time-Warner and Comcast split up their territories. This has led to a lot of confusion. Essentially, in Tennessee, Comcast has taken over the Adelphia customers. At least I am positive about this regarding the northeast corner and Memphis. And of course, Comcast is in Knoxville, Nashville and Chattanooga.
HOWEVER, there are areas that have Charter and other companies.
Like I said, it is better to use a cable search website to find out EXACTLY what is offered and by who.
Hope this helps!

I should clarify...
Memphis was not Adelphia. It was Time-Warner. As per their agreement, Comcast picked up Time-Warner's customers in Memphis. In other parts of the country, Time-Warner picked up Comcast's customers.
