Well I'm going to go ahead and take for granted the truth of this proposition because it's a bit odd that the 3rd largest city & arguably the 2nd densest (in its core area) doesn't have a solid food truck movement whereas some of the other cities of Chi's caliber blow it out of the water in this department.

Still:
Food trucks + surviving mediocre brick and mortar restaurants > current mediocre brick and mortar restaurants.

If Panda, McDonald's, Pot Belly and the like can't compete against a few guys serving food from a truck, then it should already be obvious to them that they aren't doing something right.

I live in Houston now (we're moving to Chicago) and I have to comment because food (mostly taco) trucks are all over the place here. It's nice to get cheap food; but I do worry about their sanitation. I doubt there's a bathroom in the truck and I wonder how they're washing their hands. However the trucks that have prepared food are pretty awesome. We were having a BBQ with our neighbors in the driveway when suddenly this cupcake truck drives by but stops when we flag it down. And it's delicious cupcakes for everyone! What's better than that I ask you!

cupcakes are so 2 years ago, doughnuts are back in now. I personally wish brownies would become a fad, b/c I love brownies.

Speaking of food fads, does anybody remember Cereality downtown LOL, I can pay 5-6 dollars to eat Corn Pops.

On the other hand if they plopped a couple chicken & rice or kabab stands (NY style) or some good ol pizza or hot dog stands, I'm sure it could be a hit in the right areas here in Chicago.

I suppose Rahm could some kind of a rider to ease up restrictions on Food Trucks, but I think ti would be unfair to verdors not in Chicago as they all food vedors: truck, wagon, or stand*need to meet certain health standards. One food handler must have the Illinois sanitation certificate, be present when food is sold, and the certificate must be in plain sight of*customers.

As for sanitation, the hot food verdor I know has a small wagon with electricity and water. A bigger wagon could have a waste system with a toilet that works well with biodegradeable paper*and gray water. The problem with this configuration is access to a reasonably close pump-out station.

Are these the types of kababs you would find at a persion/afghani/iraqi establishment? Because I would love a truck dedicated to that.
