Oh, I will. Though, like I said, "huge foldable triangle" is not necessarily a precondition for good NY-style pizza. If you ever find yourself in NYC go to Grimaldi's or Tottonno's (both in Brooklyn), and you'll see what I mean. Defarra is a bit more like that, at least with the grease, but it's nowhere near soaked in it or anything. It's really all about the fresh ingredients. Oh, and a good NY-thin crust does have a fairly crisp crust and it has always been like that (though there's some variation).

Anybody know a place called Oddo's? Just a little neighborhood place on Pulaski near Irving Park. I'm pretty sure it's still there. Don't know if it's the best, but it's the stuff I grew up on. I haven't been there in 20+ years. I'm hoping to get back there this summer. It was a thin-crust pizza, cut in squares. It set the standard for me.

I've been living in St Louis since the 70s and still haven't found a pizza here that I really like. The big local chain is Imo's, the epitome of "St Louis-style" pizza. It's thin, cut in squares, and the toppings are fresh and plentiful, but they don't use mozzarella - they go with provel instead. It just doesn't seem to have the right consistency; the cheese runs and drips and soaks into the crust making it soggy. Folks here swear by it, though - a lot of the locals won't touch a pizza with mozzarella.

Didnt read the whole thread yet, but there was a tiny little place just outside of Elmhurst off Roosevelt called County line pizza that was out of this world. Its been around for decades. But, I guess I am drifting off to suburbs with that one. My daughters LOVE Organ Grinder downtown, I dont get the fuss, it was a big fat mess.

Make that OVEN Grinder, its on Clark. Organ Grinder -I really didnt like that pizza did I ?

Mug's at Harlem and Touhy. Really close to Niles but Chicago. There's one in Des Plaines too. The husband and I had it the first night we got here from TX and it's the only pizza we order.

Ever get Chikago Pizza (not to be confused with Chicago's Pizza) up there?(6149 N Milwaukee Ave) It has been a couple years since I have had it, but it was very good for the few years I was eating it and they deliver really late.

PIZZA D.O.C. on Lawrence. No Chicago-style deep dish here, but amazing thin crust. It gets pretty loud on weekends, but it's worth it.

Ahhh.... OVEN Grinder... that's a little different. I've never actually eaten there. I walked in, took a look at the menu, decided they were stupid expensive, walked out, and have never been back.
