There's "Chicago Polish" cuisine and "Chicago Italian" cuisine. Is there no "Chicago Mexican" cuisine?

There is certainly a lot of Mexican food in Chicago. Are you asking if there is a Chicagomex like Texmex? If so, no.

I think it'd be fun to make a plate that had a miniature Chicago hot dog, a mini deep dish pizza (half the size of an english muffin, maybe), a mini gyro (I made those once for a party and it was a lot of fun), a dinner-roll sized Italian beef with hot peppers, a lengua taco, a couple ribs, some collard greens, some pierogi, and a little Irish stew or shepherd's pie. And apple strudel for dessert.

I wouldn't want them all mashed together. I like my Italian beefs and hot dogs (not from Portillos, though. I like the Vienna beef dogs at all the mom and pop places that have the Vienna Beef signs). And my spinach stuffed pizza from Giordanos. Maybe a six or seven course tasting menu, rather than all on one plate.

Some of my favorite foods in Chicago, though, aren't known specifically as Chicago foods. One of my absolute favorites is a Lime Chicken dish at a thai restaurant up in Evanston and Skokie. One of my absolute favorites. I also love the saganaki at The Parthenon in Greektown.

That tasting menu sounds really good.
