I usually call servers by their first names. "Bud" sounds odd to me, but not that big of a deal.

I had an Uncle Bud, and I call one of my cats buddy occasionally, but I've never called anyone else Bud. It's kind of weird, but I don't think offensive.

He was offended because Bud in from St. Louis.

(Just kidding. I don't think anything about this exchange was Chicago-specific. I don't think bud carries any extra significance in the city.)

I'm sure I was called "Buddy" by various strangers on numerous occasions during my years in Chicago. (I actually thought it was a Chicago thing.)

One young male cashier at my local McDonald's here in the Cleveland area, someone I like a lot, always addresses me as "Man". (He's probably 18, and I'm 56.) It doesn't really bother me, although sometimes I am tempted to reply, with fake haughtiness, "I'm not 'Man', I'm 'Sir'."
