Employers would only care about your address, not your phone number. If you have a Chicago City/Suburbs address and a California number, they don't care. Trust me: I moved to Chicago from Kansas and employers DID care that I had an out-of-state address, but not that that my phone number was a Michigan Cell Phone.
Keep your out-of-state number! My ex moved back home to New Orleans, and has made friends with a lot of new classmates by having them ask "what state is that number from". It's been a conversation topic.
Half of my friends in Chicago have out-of-state numbers. I'm one of the few that has a 312 or 773 number.
