Approximately 8 people

Not so creative host but wants to serve something people would eat and like -

When you attend these events, do you nibble out of courtesy; this would be a 7 PM time. We do not usually host but are the only ones who have not done so - we are pleased to do so.

No dietary concerns that I know of.

We would serve water and iced tea.

Any suggestions? Do people really enjoy the healthier stuff or want a dessert type item?

(I did ask the prior host - who will be out of town - she said, well,Christians love to eat!!)

I'd go with healthy - a fruit and vegetable tray, and perhaps cheese and crackers with it.

I would avoid desserts, mostly because I think refined sugar is bad for all of us whether or not we're diabetic.

If you really want to impress your guests... you could go for some fancy food art (I just happened to have watched this video earlier today):

Ditto. Skip the desserts. And if you have any low carb eaters in your group, a protein snack is always appreciated, so some sausage to go with the cheese or those ham/cream cheese roll ups, or devilled eggs, or just a simple bowl of nuts or seeds.
