New skin=new faith in Christ
Old skin=old rituals, sacrifices, works etc
Once you have the new spirit of Christ there is no need for the old rituals and works. They are incompatible. For example sacrificing a lamb won't bring forgiveness for sins to someone who is already in Christ. It is a new spirit, new life, new person, and new ways of living. Throw away the old skin.
See Heb 10:18 And where these have been forgiven, sacrifice for sin is no longer necessary.
Jesus used examples of everyday life to explain his message, but it took me a while to figure out the thing about new wine and old skin. It didn't make sense to me since I knew nothing about the process of making wine in skins. Of course it made perfect sense to the people back then, because they knew that old skin would have shrunk already, and new wine expands when it ferments, so the pressure would burst the old skin. You put new wine in new skins so it can expand with the wine.
