Simply because the god Yahweh in the time of Moses was a man-made pagan god who was later refined into a politically-correct god who loved people a little more than the one of Moses.
Jesus revealed the One true God, hitherto unknown to the Jews.
Jesus Christ is Yahweh just as the Father is. While Jesus revealed more about God than was previously known - progressive revelation, Jesus did not contradict what was revealed about God in the Old Testament. It was the pre-incarnate Jesus who appeared to Abraham. When the word of the LORD came to Abram in a vision (Gen. 15:1), the language strongly suggests that it was the pre-incarnate Jesus. And it is this language which most probably provides the background for John's description of Jesus as the Word.
When the LORD appeared to Abraham by the oaks of Mamre (Gen. 18:1), that was Jesus Christ. Three men had come to Abraham. Two of them were angels, and the other one was God Himself in a theophany. A Theophany is a visible appearance of God in some form in the Old Testament. Since no one has seen the Father (John 6:46) it had to be the Second Person of the Trinity - the pre-incarnate Jesus who appeared in the Old Testament theophanies.

The shocking truth is the Israelites never came out of Egypt, at least the way Exodus describes it. There is absolutely no archeological evidence to be found in the Sinai that 5 million or so Jews wandered around that area for 40 years. Do you have any conception of how much trash and debris 5 million Hebrews would leave in the Sinai over 40 years of wandering? Yet here's what archeologists say about Exodus:

I'd heard this theory somewhere, that the Hebrews were actually wandering around in Saudi Arabia and not Sinai. It's worth investigating, but the Saudi family will not allow archeologists to come in and research so I suppose this goes into the category of "Unsolved Biblical Mysteries" along with all the rest.
Like the Kennedy assassination and OJ, I guess we'll never know the truth.
