Actually, that's a matter of debate. Furthermore, the Jewish translators who translated the Hebrew into Greek in the Septuagint translated Exodus 3:14 as ἐγώ εἰμι ὁ ὤν - ''I am the Being.''
Exodus 3:14 14 καὶ εἶπεν ὁ Θεὸς πρὸς Μωυσῆν λέγων·
ἐγώ εἰμι ὁ ὤν. καὶ εἶπεν· οὕτως ἐρεῖς τοῖς υἱοῖς ᾿Ισραήλ·

As for the issue of 'editing,' your own Tanach which is none other than the Masoretic text which was compiled by the Masoretes between the 7th and 10th centuries AD, has itself been edited. For example, in Exodus 32:8
the Tanach or Masoretic text reads as follows;
Deut. 32:8 When the Most High gave nations their lot, when He separated the sons of man, He set up the boundaries of peoples according to the number of the children of Israel.
The Tanach or Masoretic text differs from both the Septuagint and the Dead Sea Scrolls in this passage.
The Septuagint reads;
Deut. 32:8 When the Most High divided the nations, when he separated the sons of Adam, he set the bounds of the nations according to the number of the angels of God.
The Dead Sea Scroll of Deuteronomy 32:8 reads'
Deut. 32:8 When [the Most High] gave [to the nations] their inherit[ance, when] he separated [humankind, he set the bounds of the peoples according to the number of] the children of God.
So we have both the Septuagint and the Dead Sea Scrolls, both of which are older than the Masoretic text, agreeing that the reading is 'Sons or children of God' while the Tanach or Masoretic text reads 'children of Israel.'
Experts agree that the correct reading is 'sons of God' rather than 'children of Israel' as the Tanach has it.
Here is another example, also in Deuteronomy 32 in which the Tanach is different from both the Septuagint.
The Tanach;
Deut. 32:43 Sing out praise, O you nations, for His people! For He will avenge the blood of His servants, inflict revenge upon His adversaries, and appease His land [and] His people.
The Septuagint;
Deut. 32:43 Rejoice, ye heavens, with him, and let all the angels of God worship him; rejoice ye Gentiles, with his people, and let all the sons of God strengthen themselves in him; for he will avenge the blood of his sons, and he will render vengeance, and recompense justice to his enemies, and will reward them that hate him; and the Lord shall purge the land of his people.
The Tanach leaves out the part about the angels of God worshiping him.
All present day texts, both Hebrew (Tanach) and Greek texts have their share of editing.
