But the crux seems to be that from your/ Judaism's pov as long as it 'fits' under the authority of Judaism, it is acceptable, otherwise it is not. (The 'other guy is wrong') as you mentioned.
It is apparent from your many posts that you know very little about Judaism. And yet you continue to make broad sweeping generalizations and criticism of Judaism. For instance the Torah and the 613 mitzvoth are only instructions for Jews to follow, not for anyone else. Judaism has always held that other religions are valid paths to God. For instance in Judaism "the other guy is wrong" is NOT the case because Judaism does not concern itself with other religions.
They place far too much between an individual and G()D as to make it quite impractical for the average human being to achieve

Yea...They are forgetting about those in the TaNaKh that walked in HaShem's ways all their life and HaShem called them Righteous...So, yea, it is attainable IF you want to...The more you follow your Yetzer HaTov the better person you become...

No...They did not boast in their ability, it says nothing of the sort...All it says is they agreed to do all that HaShem has said...That is not a boast, that is just saying, "ok"...How can one boast about anything when one hasn't done anything?...

Because it was a boast - they had not said anything related to their ability up until that point. First (at the Red Sea, Exodus 15) they praised Him as their strength and song - and their salvation, then they murmured and expressed fear, frustration and rebellion.
The only time they talked about their ability was Exodus 19:8, and...

Please review - the moment they said, 'All that the Lord has said, we can do" the skies turned dark and thundering came from Mt. Sinai. [Exodus 19:9)
Moses was then called up the mountain to retrieve the first set of tablets (which he broke, signifying they had broken the laws before they even saw them).
As pcamp alluded to in another post, their view of God turned negative when the darkness and thundering started, and they did indeed look to fashion another god more to their liking. They were under law the moment they stated their ability.
To review, read Exodus 19, verses 8-9 - see the order of events, then proceed with the rest of the chapter - His tone turned at that very moment in verse 8.
