Luk 22:38 And they said, Lord, behold, here are two swords. And he said unto them, It is enough.
Why would two swords be ENOUGH?
Paul
Because He knew the disciples would transgress the commandment to love thy neighbor and let God's will be done. Hense, He was numbered with transgressors. Luke 22:37
All of the prophesies had to be fullfilled. This was one of them.

Interesting. Thanks HotinAz. I have a different understanding that I will put forward in a bit.
Luk 22:38 And they said, Lord, behold, here are two swords. And he said unto them, It is enough.
The meaning of this is understood Spiritually:
Eph 6:17 And take the helmet of salvation, and the sword of the Spirit, which is the word of God:
Notice that? - the Word of God is called a Sword. So why TWO? Now that we know that the Sword is the Word of God then when is it ever enough that TWO is enough with reference to something said? Again, the scriptures tell us:
Deu 17:6 At the mouth of two witnesses, or three witnesses, shall he that is worthy of death be put to death; but at the mouth of one witness he shall not be put to death.
Notice that TWO is enough to put someone to death. When Jesus was telling them to take a Sword - He was telling them to be armed with the Word of God and to be sent forth by TWO (Two having the Word of God) to condemn us.
That is the Spiritual meaning as to why TWO Swords is enough. Did you ever notice that Jesus sent His Apostles out in TWOs?

Wow! thanks for sharing paul, is something to think about grace and peace!
Hebrews 4
12For the word of God is quick, and powerful, and sharper than any twoedged sword, piercing even to the dividing asunder of soul and spirit, and of the joints and marrow, and is a discerner of the thoughts and intents of the heart.
There's that word..twoedged sword...now that's a sharp sword...cuts on both sides..

The only point Jesus was making was that He was about to leave them and they would be on their own now.
Thats why Jesus tells them to pack, and to take the purse and the bag and the extra footwear, and if you don't have a sword you better get one.
The Disciples noticed that Jesus talked about a sword, and so they informed Him that they had 2 already.
The Point Jesus was making is that he was about to die and would not be around to provide for them anymore.
The number of swords was moot.
The idea that Jesus was talking about was that He would be soon gone and that he men would be searched for as if they were thieves..

First off that would be taking His words in a very earthly sense. Secondly, the number of swords was apparently important for Jesus said it was ENOUGH. We are to understand Jesus Words from a Spiritual perspective and not an earthly one. Jesus was talking to all His disciples and two swords wouldn't be enough to protect 12 disciples. Furthermore, Jesus rebuked Peter when Peter actually did use the sword. Also, Jesus could have easily have told them to carry a sword after He rose from the dead. We have no evidence of the disciples ever using a sword to defend anyone thereafter so it makes no sense to have them carry a literal sword especially when they are to turn the cheek and not return evil for evil. This was obviously a spiritual message as is everything Jesus did and said.
