The term Caucasian didnt even exist until the 1800's. It refers to the "people of The Caucasus Mtns." And specifically to the shape of the skull of those peoples as different from Black Africans.

I don't know if it is in the Bible, but the people in the mid-east and north Africa are considered caucasian.
