If you start hunting around the various university websites, you will find a lot of great cheeses produced by the college dairies. I have had great experience with University of Wisconsin's Babcock Dairy and Mississippi State's dairy.

I have to confess that I finally had my first flat iron steak last Thursday night - at a TGI Fridays, a place I generally avoid.

That was one excellent piece of meat, well prepared, It is a little more chewy than a tenderloin or a t-bone but it was not tough at all.


As for college cheeses (and ice creams):

University of Wisconsin Babcock - some pretty decent cheddars and Leipäjuusto (bread cheese). Also some great ice cream.

Mississippi State Dairy
- Edam and Cheddar cheeses.

Washington State Creamery
- (all cheese is canned) - Cougar Gold sharp cheddar and flavored cheddars.

BYU Creamery - no cheese but really fine ice cream.


There are a couple more that I want to try - Michigan State and Nebraska come to mind,

I will confess I have never had a flat iron at a restaurant, though I know they are becoming more common. Me and my Weber are my sole experience. I will also state as their popularity volume has increased, consistent quality has not.

On Mother's Day, my son, daughter-in-law, and 2 grandchildren of high school age were over. I had run into a sale at Kroger and threw 3 flat irons on the Weber, somewhat over 1/2 lb for each of the 6 of us. I combined this with a super salad, I just went through the salad bar at Kroger and got something of everything combining it with a multi-lettuce package purchased separately. Added to some baked Idahos timed to mesh with the grill, of course with chives, sour cream, grated cheese, butter, and bacon bits, we were in heaven.

Total cost of meal - $18 for the flat irons, $15 for the super salad, $2 for the baked potatoes plus about $6 for what I piled on them or $51 for 6 people. You may get the idea why I am not a frequent restaurant customer.

If your flat irons are coming out too dry or chewy, you are overcooking them. Once the surface marbeling disppears, the sucker is ready to eat.

Damnit, I wanna order a wedge of this for my dad, but their website isn't working. Does it work for anyone else? This page opens, but then when I click "Order Now", it goes to some funky messed up page. Guess I could just call.

I clicked on the Order Now in the box on the left side of the page. Everything seemed to be working fine. I use IE8.

Hmm still not working for me...must be something funky here at work. Oh well I'll do it when I get home.

I actually don't dabble in blue cheese, but my dad will hopefully love it! I'm not well versed in most blues but I know English Stilton is supposed to be pretty damn good...how would something like this compare?
