Yeah, on the West Coast. There aren't plenty of cities all over the country that have a sizeable number of Chinese. But you could go to Kalamazoo, Michigan and find a significant number of Mexicans. Really, the question is more or less becoming, "Where can you go and not find Mexicans?"

Climate, access to fresh produce (big strike against NE cities there) play a significant role in recreating a nation's cuisine. Just because you have Mexican restaurants, doesn't mean they're automatically good. New York is a prime example of this.
It makes me chuckle that so many people think these agriculturally poor regions where freezing temps are not uncommon, and where mom and pops have to import hand-me-downs from other, more bountiful areas...also have the best ethnic eateries. Maybe Russian and Polish.
