Keep in mind most of the time I've spent in the metro area is in Katy, which I believe is west of the city. Around there I thought the tree cover was sparse compared to what I'm used to.

That's because Katy is considered prairie. The further west you go out of Houston the sparser the vegetation becomes all the way to San Antonio.
Anywhere north of Downtown Houston is going to have tree coverage.
The cool thing about Greater Houston is it lays in 3 or 4 different geographical regions of the state...Piney Woods to the north, prairie to the west, Gulf Coastal Plains to the South, & marsh/swamp land to the east.
