There are also some decent sized localized fairs in each state that attract state wide crowds..

Fryeburg Fair in Maine: Fair-Home Page
Deerfield Fair in New Hampshire: Home Page
Topsfield Fair in Massachusetts: (Americas Oldest) Topsfield Fair | October 4 - October 14, 2013
Champain Valley Fair in Vermont: The Champlain Valley Fair

and some very small ones...
Goshen Fair in Connecticut: Goshen Agricultural Society
Washington County Fair in Rhode Island Welcome To The Washington County Fair - Rhode Island
and interestingly enough, each of the state houses on the fairgrounds are considered legally within which ever state they represent. So West Springfield borders 5 states.

Don't forget Pronto Pups! MN is definitely the best state fair, I mean let's be real.

The State Fair of Texas has to be one of the best state fairs in the USA. Fair Park (where the Fair is held) is a National Historic Landmark due to its 1930's art deco buildings.
