I prefer Texas barbecue to North Carolina barbecue.

Though I prefer pork to beef, I'm not a big fan of the vinegar-based sauce that is characteristic of North Carolina style barbecue. Even though western North Carolina also has a tomato-based sauce, North Carolina is really known for the vinegar-based sauce which is predominate throughout eastern and central North Carolina.

Western North Carolina barbecue is more similar to barbecue throughout other portions of the southeast (minus parts of South Carolina and southeast Georgia with the mustard based sauce), being that it is pork with a tomato-based sauce, often with a sweetness. If we were talking about western Carolina style, I'd prefer it to Texas style, but since North Carolina is known for its eastern style, which often gives the name North Carolina style, I have to go with the Texas style in this poll.

Pork lovers will have plenty to choose from in Texas. I'm not sure why so many people seem to think otherwise.

While there is good pork BBQ to be found in Texas, it is primarily beef that is representative of Texas BBQ and is what put Texas BBQ on the map on the national level. I'm sure you can buy brisket in NC, but no one would really associate that with "North Carolina barbecue". And vice versa.

Of course, because we have what no one else really does, but I'm speaking about those who act as if beef is the only quality thing here. You don't want to know how many Texas BBQ places I've been to where the brisket wasn't the best thing on the menu.

Beef barbecue can be found in the Carolinas and other southern states, but not to the same degree that pork is available in Texas. Even the highly praised Franklin's appears to have more pork than beef on its menu (assuming that they serve pork ribs and pork sausage):

People think that? I don't really know anyone who loves brisket but refuses pork ribs and sausage.

And brisket is rarely the best thing on the menu...it's much harder to screw up pork than a brisket..this is why it's so special when you have places that get brisket right. It's significantly easier to prepare pork BBQ, which is why in places where pork is the mainstay, the sauce is what sets it apart regionally and is the barometer for quality. A properly smoked brisket doesn't need sauce.

I'm not telling you that you should prefer brisket over pork or whatever your preference is, but I don't really understand why you're so incredulous that people primarily associate Texas 'cue with beef.

I'm incredulous? If anything, I'm upset that more people don't realize how diverse Texas BBQ is. We're not a one trick pony.

NC has better pulled pork. But Texas has those great need ribs.
