There is nothing sweet about Texas BBQ- sauce's are generally tomato-based, but the biggest thing about TX BBQ is that it's not about the sauce. Real brisket, pork ribs, sausage etc. are served market-style with either no sauce or just a dollop. The flavor is all in the meat.
that said, I love sauce and I dig the BBQ in North Carolina. I prefer beef so for me, it's Texas by a hair.
