Texas vs North Carolina: Which state has better BBQ? (people, cons, states)

And its two different styles of BBQ. Texas is more beef based and NC is more Pork and Chicken. So which state has better BBQ?

Even though I'm from NC, I will have to go with Texas on this one! I had brisket at a BBQ fair a couple of years ago and loved it!

Actually, it's multiple styles. Neither one of these states has one style of barbecue.

I didn't see any Beef Brisket when I was in NC. And the BBQ sauces were a bit different. Can't put a finger on it tho.

There is nothing sweet about Texas BBQ- sauce's are generally tomato-based, but the biggest thing about TX BBQ is that it's not about the sauce. Real brisket, pork ribs, sausage etc. are served market-style with either no sauce or just a dollop. The flavor is all in the meat.

that said, I love sauce and I dig the BBQ in North Carolina. I prefer beef so for me, it's Texas by a hair.

I'll rephrase it. The style of barbecue that most people outside of Texas associate with Texas considers sauce sacrilege.
