Which has the closest vibe to Asheville, NC. Unfortunately, there isn't much employment aside from the hospitality field in Asheville. What would be best for an individual, who is 21, in the tech field who loves food and jam bands? Any vibrant/artsy/foodie/live music areas in particular? Bigger city is better than small.

Chapel Hill and Durham are basically the same city. Separated by an interstate. People in Chapel hill shop in south durham.

Since these are all NC cities, why wouldn't you post this in the NC forum? No offense but none of these cities are really on the radar from a national perspective, at least to the extent to which it represented on this forum, so I doubt you'll get too many replies on City vs. City.

Moving to the Triangle and renting for 6 months gives you the opportunity to check out all of the particular places and then make your own best assessment as to which community is the best fit.

Carrboro is probably the most like Asheville, but honestly Chapel Hill/Carrboro and Durham aren't that different. I'm sure you'll be happy in both areas. Raleigh is a little more preppy/trendy, not quite as hippie or artsy.
