So which is more to your preference. Generally a visit to either city, has you try one of these local favorites.

The cheesesteak is the vastly superior sandwich mainly because of the superior roll/bread. Philly has the best tasting sandwiches and Italian bread/rolls in country. The worst authentic Philly roll is greater than the best Italian Beef roll honestly. I am generally underwhelmed by the bread from outside of Philly. Give me a Roast Pork from Johns over any Italian Beef as well.
I like both as long as Cheese whiz is not used in my Philly Cheesesteak. The Chicago Italian is awesome. But I am partial also to a Italian Cheese steak with plenty of tomato sauce. Just avoid the whiz and too much cheese.
I got to try authentic versions of both for the first time within the past couple of years.
In 2019 I visited Philadelphia for the first time, and did a lot of research on where to get a cheesesteak. I decided to visit Dalessandro's. It was incredible. Their red pepper relish was so good. My mouth still waters thinking about it now.
I've been to Chicago many times, but finally tried an Italian Beef for the first time on my most recent visit about a month ago. We went to Johnnie's in Arlington Heights. It was equally incredible. The beef was so flavorful, and I loved the relish topping...I forget what they called it.
It's hard to pick which is better as both are very well done.
But gun to my head, give me Italian Beef not dipped.
