The Los Angeles area might be worth looking at, especially its eastern suburbs in the San Gabriel Valley, and Torrance. The second largest Japanese American community in America lives in this area, after Honolulu, as well as the largest or second largest populations of Koreans, Chinese, and many others. The LA area checks all the boxes of amenities from food to politics to nature, and if you live in some areas, you can find decent housing prices, with reasonably quick access to the mountains.

Houston, might be a good fit; moderate politics because they don't politicize everything like the left does.

Thank you for all of the helpful replies! It's much appreciated. I haven't made a decision yet, but am planning to check out Philadelphia and Seattle/Tacoma soon.
