I think you're severly downplaying the level of activity in downtown Denver. Outside of the 16th street mall there is lodo, Larimer's square, Auraria campus, and Coors field. 1000s of new residential units keep the area from feeling like a strict business district.
That's it for Downtown Denver. Even the locals say they don't hang out in downtown. They hang out in different areas of the city like Rio for beer, Santa Fe for arts and others for entertainment.
In San Jose: it's all downtown or to some extent, Santana Row. Downtown actually has beer, wine, night life, art and entertainment scene. People go there to play or live.

No, just much taller office towers with large space due to no flight path. Downtown SJ checks all the boxes of a cool downtown. People actually have fun downtown, not just go to a game and just passing by. People go to Santa Fe for First Friday or Thurs. art crawl in Denver. In SJ: downtown's SoFA funky district.

Whether by racial breakdown or through foreign born population or by the proportion of persons that speak a foreign language, San Jose is considerably more cosmopolitan.
Denver is nearly two-thirds White while San Jose's largest group are Asians and they only constitute 34% of the Metro.
