Beyond just the numbers, between Houston and Dallas, which city's mainstream culture seems to be influenced more by the Hispanic population? In which city is it more common for non-Hispanics and Hispanics to interact? If the question were about metro areas (Greater Houston vs the Metroplex) instead of cities, would the answer change?

Simply put
Houston is like if San Antonio and baton rouge had a baby.
Dallas feels like a bigger Tulsa

Houston does have more Hispanic influence but your description of Dallas is stupid.

It's not stupid, everybody know Dallas is Oklahoma's largest city. You can't walk five feet in Dallas without running into an Okie.

This is very true. When I lived in Dallas, I met many people from OK.

They both seem similar to me. Houston's population may be a bit more established perhaps.
