Crawfish are found all over the country. I know one of the towns near where I live on the Sacramento River delta has a big crawfish festival.
I think it is just so strongly associated with Louisiana becuase it is such a cultural part of the state and is well known. Also "as of 2005, Louisiana supplies 95% of the crayfish harvested in the US. In 1987, Louisiana produced 90% of the crayfish harvested in the world, 70% of which were consumed locally."
Crawfish isn't seafood either. They live in muddy waters of bayous, lakes, & rivers. Mostly in the South Central region of the country (Eastern Texas, Louisiana, Mississippi).
Freshwater crustaceans and fish are still considered seafood.

Oh no doubt, I didn't even know crawfish were found elsewhere till a few years ago and was surprised to see a town near me had a big festival for it. One of the local New Orleans style resturants here has them shipped from LA instead of finding a local supplier.

While Sacramento may be known locally for its crawfish festival, it isn't world famous like the Deep South for its crawfish dishes, strong influence on regional culture, & economic impact in the grand scheme of things.
Louisiana ships crawfish all over the world, Northern California does not.

Sadly, I think China has taken over a good amount of the Crawfish industry. Like in grocery stores (or at least in New Orleans), they have frozen and peeled Chinese Crawfish and they are always cheaper than the local stuff (but not as good of course). I think most people still try to use local crawfish and the crawfish that is still in the shell is usually always local. You can even see from that source that I posted that it went from 90% of all crawfish harvested in the world to just saying 95% of crawfish harvested in the U.S.
