My wife cooked up a "mess" of soft shelled crabs and speckled trout for dinner last night. It was fantastic!
Soft shelled crabs are seasonal-May to be a bit more percise. The speckled trout are caught year round. And praise the Lord that the Coastal Conservation Association (CCA) apparently did not pass their gamefish status bill outlawing speckled trout. Otherwise I would not been able to buy the speckled trout from my local seafood market!
