I'd suggest doing either Asheville or the Outer Banks, since both are too much. The weather would be better for the Outer Banks in the summer. I would save the visit to Asheville for the fall when you can enjoy the autumn colors.

Just make sure you can get a hotel reservation. It normally is a minimum of three days in the Outer Banks. A couple of major sights are the Lighthouse and the Wright Brothers Memorial sight in Kitty Hawk.

I'm not sure if you are driving in or flying in but here is a 'long' weekend trip I have done a few times you could stretch out a bit.

From Raleigh drive east on 264 to Greenville, Washington, Bath, Bellhaven, Swanquarter.

Bath is one of the oldest towns in NC, its small but very charming and photogenic for a couple of hour stop.

From Swanquarter pick up the NC State ferry (about 2.5 hours) over to Ocracoke. This is a great little ocean town to spend a couple of night in while exploring.

Drive up highway 12, a short free ferry will take you over to Hatteras. Check out the light houses along the way, stop at Oregon inlet fishing center to catch the fishing fleet and continue up into the Nags Head area.

Spend 2-3 nights in the Nags Head area and see Kitty Hawk, Roanoke Island etc. There are plenty of things to see and do for 3 or 4 days if you have time.

Head back west on highway 64 into Raleigh.

Overall this is a trip that will give you a pretty good feel for the NC outer banks and will create memories that will last a long time.

Have fun, enjoy, and always be safe.

Considering the fact that you will be in Raleigh anyhow, why not explore the Asheville area and then move on to Raleigh? There is plenty to see and do there, and it is not that far from Asheville. Save the Outer Banks for another time unless you have an extended vacation time.
