Maybe one of the stone quarry firms, like Pioneer Rock, could recommend someone who works with stone, give you some leads to pursue.

Sounds ambitious. Good luck. A few things to keep in mind;

El Paso county is zoned. Construction of buildings may require a permit and inspections if they are over 120 sq ft of floor space. Fences under 7 feet are exempt form permits.

Harvesting stones from public lands may be regulated. The US Forest Service does allow collecting of mineral samples at quantities less than 10#. The amount needed for a fence or building may necessitate permits from the Forest Service or Bureau of Land Management. Review for prior mining claims on any significant collecting, depending on locale, could be required. Any removal requiring mechanization may also require permitting.
