I'm going to be in CO for a couple days w/ my kids & we'd like to try whatever food/snack/beverage items are unique to the state. Is there anything that Colorado is especially known for? Anything you absolutely must have when you're home in CO?

I don't know if it's authentic but I learned to make a dish there called Rocky Mountain Eggs that has scrambled eggs, onion, potatoes, bell pepper, and cheese in it. For some reason it's now become a Christmas morning tradition in my family. I guess the Denver omelette would be a local dish.

If you are going to be in Pueblo we are known for our Mexican food, especially the Slopper. It is a hamburger with our chili on it (made with the Pueblo pepper).

Tocabe is an "American Indian Eatery" specializes in Fry Bread (yum) and family recipes from Osage culture.

Where else are you going cause I do have some other south western states ideas, but I'll have to get exact info as I am on automatic after all these years.

Rocky Mtn Oysters, Colorado Cool aid (not for the kids lol) and Denver Omelets. j/k

I can't think of anything, though I would like to try some of the Mexican food in Pueblo, that slopper looks like heaven (and heartburn). Before I left the western slope there were a lot of ranchers who had invested in emu and there were a few emu dishes available. I don't know if that's still the case.
