Don't know about restaurants or hotels, but if I was doing that trip I'd add quick trips to the North Rim of the Black Canon, and Garden of the Gods to the loop. Two must see places IMHO. If you don't add The Garden of the Gods, at least do the Black Canyon.

Denver -> Breckenridge -> Vail -> Glenwood Springs -> Grand Mesa -> Black Canon of the Gunnison National Park (North Rim) -> Carbondale -> Aspen -> Leadville -> Garden of the Gods / Manitou Springs -> Denver.

Wow a lot of great suggestions Thank you! It seems like I need to rework the routes and the dates again, possibly asking for more days off work. Too many great spots to visits in Colorado!
