I think A-Basin and Copper Mountain plus a couple of others are now open. It's been fairly dry and warm in Colorado this last month or so, but the forecasters are expecting cooling and snow at the higher elevations in the next day or two. The majority of the resorts expect to open around Thanksgiving and/or the first week in December. You can get up to date reports HERE.

That site is not up to date. All of the Summit County resorts are open now. A Basin opened a month ago, Loveland a couple days later, Copper and Keystone at the beginning of November. Breckenridge opened last week, Winter Park opened yesterday.
It's early season and there's not a lot of terrain open yet. A friend skied Keystone last weekend and said conditions were very good.

Personal preference but usually don't ski before Thanksgiving.
Lack of coverage, rocks - less than ideal.
Obviously this varies year-to-year but I've never enjoyed skiing before Thanksgiving.

New Mexico resorts are expected to open Thanksgiving (Sipapu now though).
