Can anyone recommend a safe place for me? I'm newly single, in my late 40's and would like a nice area to call home. I like the idea of a bit of bluegrass, a cold brew and accepting folks to neighbor with. Any ideas?

Lyons has an annual Bluegrass Festival taking place in town around July

But what else do you need?
Job?
Size of home?
Price of home?
Nearby amenities?
Schools?
Activities?

I would recommend Eaton. Its a safe country town of 5000 people. Just 10 minutes from Greeley or 20 from Fort Collins if you need to get to the city. Some nice little bars here for your cold brew needs and really laid back, nice people to visit with. I think it would suit you fine.
