I am thinking about buying some vacant land in the mountains and possibly parking and converting an old bus into a small tiny home that I can use as a little getaway spot and also maybe put on AirBNB to make some extra cash. Does anyone know if this is legal or are there codes against leaving buses parked?

What mountains? It all depends on where. You might want to check the local county you plan to try this in.

Not exactly sure where the land would be. Probably would purchase it for atleast another year. Just wondering if anyone knew of any Mountain towns within a 2 hour drive of Metro Denver that is off limits to mobile homes and buses. Also, there would not be a "green" house.

I will be putting in a fireplace similar to the one in this listing for heat in the winter. Not sure if I will have water.

Any dwelling unit is going to need to be connected to a water and a wastewater system. And you might have a hard time finding a jurisdiction within two hours of Denver that will let you use a mobile home as a permanent residence outside of a mobile home park, and none that would allow a school bus.
