Ouray would be great. Look at flying into Montrose or Grand Junction rather than Denver and avoid the 6 hour drive (if the weather is good).

Glenwood Springs is also a good choice, you could fly into Denver and take the train to Glenwood, there is a local bus that will easily take you into to Aspen for day trips. There is also the Eagle-Vail airport (30 minutes) or Grand Junction (1 hour), instead of driving over two mountain passes from Denver at one of the busiest times of the year.

Frisco is pretty cute and closer to Denver but you will pay for the proximity to Breckenridge at Christmas, there is a free shuttle so you really don't need a car.

Amtrak from Denver is one of the best rides in the country if done in daylight. It goes through stunning scenery that is not accessible by car.

For the close experience of the Alps...(affordably)

Suggest staying in Glenwood Springs (enjoy the hot springs in evening) and taking day trips to Snowmass and Aspen (If you take the train to Glenwood, you can rent cars there for day trips. ) Nice smaller ski areas near Glenwood (which plenty of variety for your 7 yo), that are not as busy or expensive as the popular legacy slopes.

Our kids were always more impressed with the pools than the skiing when staying in lodges.
Snowy nights in Glenwood Hot Springs are very memorable to our kids.

Ouray / Telluride would be another option (but expensive and remote)

While I grew up in Estes Park and at the time had a very nice town center with free public Ice Skating, it is not such a popular spot for Christmas and good chance of No Snow. (And out of the way for 'snow Christmas', Great spot in early and later summer! (Elk rut / aspen)

Just enjoy what is available, but...
Unfortunately, nothing compares to Christmas in a sleepy village the Alps. (Wooden sleds, candles in the windows, cows with BIG bells donging next door, Church chiming every 1/2 hr, skating in the town square, making rachlettes after your daily trip to the community market...)
We were stationed here one winter: (Memorable Christmas for kids)
