For "real Coloradans" a piece of good news . . .
For those of us Colorado natives and/or long-time Coloradans, who constantly see the Colorado we've known and loved disappearing under the flood of development, money, trophy houses, etc., etc., good news is sometimes hard to find, but there is some every so often. This is one of those times:

Yes, that exalted Colorado institution, Bruce's in Severance, is re-opening. For the uninitiated, for nearly a half-century, until its owner's death, Bruce's was known as the world capital of Rocky Mountain Oysters. To be honest, the building itself was a dump, but inside one could get a plate of the best Rocky Mountain Oysters anywhere--and, other than a hamburger, that was about the only item on the menu. A true "real Colorado" dining experience, and one that appears to be coming back--even including the long-time cook (he would probably punch you out if you called him a "chef").
If you
a) don't know where Severance is; or
b) don't know what Rocky Mountain Oysters are,
you're probably not a "real Coloradan," and I'm not going to save you here--at least, not yet.

I was born and raised in Colorado, 6th generation to be exact, but I've never understood the appeal of Rocky Mt. Oysters. Just couldn't do it! Glad to hear Bruce's in back though. I know several family members who will be jumping with joy!

Bravo! I really thought part of CO died when Bruce's closed. I've spent many an early morning there prior to waterfowling enjoying their sumptuous breakfasts-eggs, hashbrowns, and, of course, nuts. What a great family and great undertaking this is! Bruce Ruth is grinning from ear to ear up in heaven. Glad to know most of the original staff will be back. I hope Betty returns, too. Thanks Jazz for beating me to this one. That was the first thing I read today in the Post.
Sad when you look around Windsor Reservoir these days, though. Pretty much surrounded by pretentious McMansions.

I know what they are, but never had one before. How would you describe how Rocky Mountain oysters taste?

Sort of like a chicken-fried steak, only maybe a little more "gamier." Of course, served with cocktail sauce, and not gravy. When prepared properly (which Bruce's did), they are excellent. I'm always amused how some people get "squeamish" about trying them, when you see what other kinds of stuff they eat every day. If you've ever been in a meat plant, things like hamburger, sausage, hot dogs, etc. take on an whole new meaning. I still eat 'em, but that's way "nastier" than Rocky Mountain Oysters.
And, for the vegetarians out there who are slurping up some apple sauce right now--ever wonder where all the wormy apples go? Yep, you guessed it, worms and all. Watched that many times in an apple sauce and apple juice processing plant. Nothin' wrong with that--them worms have only been eatin' apples, right?

awww JL..... why'd ja hafta go an' do dat fo'? now i can cancel apple sauce off my menu along with them nasty saggy stinky old bull balls. lol no i'll probably be eating apple sauce again, i'll just cook it. it's yummier warm anyway.
