I will do my best but I don't have kids so I will toss out some ideas and you can decide if they work or not.
Let me start with lunch:
I would suggest Angelo's Pizza on the Riverwalk. They have great food and its a good atmosphere that I think kids would like. Plus either before or after lunch you can walk around the area.
This is a picture of the resturant and the Riverwalk.
Things to do:
One idea is the Buell Children's museum, I hear Colorado Springs does not have one. They are located on Sante Fe by first street. It is part of the Sangre De Cristo Arts and Conference Center. I hear they are very good but to be honest I have not had personal experience as I am 35.
One thing Pueblo has that is very good is a small area for rides by the city park on the south side of town. It is closed now but I tell you about it because you can always go by and look at it and see if that is something your kids would want to come down and ride in the summer. It is very good and cheap and it is next to the park where they have a zoo and big play grounds for the kids. In the summer a small train runs around the lake there, this is a very popular place for children. In fact I might take some pictures of it some time and post them here, this is a gem for Pueblo.
One more possible idea is the nature center by the Arkansas river but I think it would be better in the summer as well.
I have other suggestions but you want to know things that you can't do in the Springs so for now this is what I have. If I think of more I will post them, if other people can think of things I missed since I don't have kids feel free to post it as well.
LOL I have to say I love the we don't want to ski part. The only mountain Pueblo has is a mesa and it rarely has snow on it, and that is in January!

If you've still got time to read this, take them to Harbor Freight! Fun tool shopping? You can tell Uncle McGowdog doesn't have kids.
Or, you've got the Rosemount Museum! A great indoor place to kill an hour or three!

Well, we went to Angelo's for lunch and Buell afterward.
Angelo's was great pizza... though the Sicilian style ordered by the table next to us looked even better than the normal pizza we ordered. The garlic knots were FANTASTIC... even my little picky eaters liked them! I would request a table off the river to anyone else... we didn't even realize it had "a view" until just before our pizza arrived.
Buell's was very cute. My 9 year old was completely bored there though (and my 6 year old had enough after 30 min)... more for the younger crowd I guess. And the computers everywhere... well, we have that at home. I didn't want to sit around watching my kids play on the computer... I could do that here, same with the craft stations (but then again, I'm a very 'crafty' person, and my kids have 24/7 access to the supplies here ...more than just what was available at the stations)!
It was worth the half hour we spent there. The statues out front were terrific... my kids loved posing with them. The 'marble run' was really cool, though only half of it was operational while we were there. They were really pushing membership. If we lived in Pueblo and my kids were younger (and I was less crafty), it would be a terrific deal... great place to spend an afternoon with kids, especially for a sahm or a playgroup.
We would've checked out the other art galleries (my kids were ITCHING to) but I became suddenly ill and we had to return to the Springs to get me to the doc. (Not related to lunch though... something I've been ignoring suddenly reared it's head.)
We'll be moving to TX in the summer, but I think we'll have to take another day trip down there soon to see the stuff we missed... including the Rosemount. Thanks for all the tips.
Any OTHER suggestions for lunch when we head down next time?

I am glad you had fun, sorry about your illness and hope u get better.
As far as posting pictures I go to photobucket then use the direct link.
Pueblo has plenty of restaurants, what kind of food does your family like then I can give you some good suggestions.

I just read where the city council is going to annex another piece of land into Pueblo. This one is called North Vista and is located north of 47th street and west of Troy Ave, that is north of the university. The Chieftain reported last year that with Pueblo Springs being annexed in the city a number of smaller annexations where going to happen as well by other developers, that seems to be the case.
