My husband and I are actually in Colorado right now, as he's originally from the West, and he fully intends on moving back... we recently happened through Hotchkiss, Colorado, and I don't know specifically what you are looking for, but it is a small, rural mountain village for sure. It's clean, has what appears to be a nice school, and it has the essentials, excluding a wal-mart. It's also close enough to Grand Junction to commute.
You should check it out, and remember that everything(well, pretty much) posted on these forums are opinions, and what you might find acceptable, or even ideal, others would not. If you can do it at some point, check it out for yourself! Good luck!
Oh, and Delta is also nice, but definately a bigger town than Hotchkiss... Montrose, by contrast, is BUSTLING.

IMO, the Hotchkiss - Crawford - Paonia area is the most beautiful part of Colorado. I'd live there in a hearbeat if my livelihood was not dependent on the local economy.

Just got back from Colorado and had a great time even though it was a short trip.
Looks like some great horse property in the areas we were in (Woodland Park, Flourissant and Divide) and as we were driving back home, we drove through Buena Vista and Salida.
I saw tons of horses and property in the Buena Vista area.

Looks like we're stayin' in NM. Things have changed immensely since I began looking to move. The money situation is much better (still not where we were a year ago- but then, who is?) and we suddenly found ourselves with our pick of homes with what we needed and within our range. We thought we were settled on one, then one we'd looked at months before dropped drastically and now we close on the 30th. Since we're now able to take a deep breath, all the reasons we came here in the first place are coming back to the forefront.
What about yourself? You headed to CO?
