Funny you should mention that.......... That was the only thing I left on my plate. They reminded me of spinach! I think collard greens might be an acquired ta ste, or something you have to have grown up eating to enjoy.

Maybe so or maybe not. I have eaten them all my life but my military brat wife never had them until we got together in our 30s. Now she makes them good enough that friends request she bring them to potlucks.

If nothing else they act like a turbo charged salad on the digestive system. Eat enough of them and you can't help but to be healthy.
