First of all, welcome to Ohio! Very glad to have you & your family coming here to join us
As someone who definitely shares your love of the country & rural settings, I must say you've got lots of options.
One thing to keep in mind about central Ohio: it is
growing. Rapidly! Back when 270 was built, it was just a huge circle-freeway that looped through farmland. Hilliard, Dublin, Gahanna and Pickerington were all just nice little farm towns, where everyone knew each other and kids would hang out at DQ... Even as late as the 1980s, New Albany and Powell were just quiet, peaceful places where Norman Rockwell woulda felt at home...
That was
then.
My point here is, all this growth (i.e. sprawling suburban crap!) keeps pushing further out and gobbling up more small towns and rural areas, turning them into teeming, traffic-congested, angst-ridden, Yuppiefied nightmares!
So...the trick is to find someplace
far enough away from the sh— uh...
city, you can be assured that suburban-hell
won't reach you in the foreseeable future.
I almost moved myself to
Zanesville recently, but it didn't work out. So for now I'm still stuck in Cols.

Zville is a charming, historic town although its economy leaves much to be desired
In Licking County,
Utica is a sweet little place. Each summer they have a Velvet Ice Cream festival there! Other cool little towns there are
Toboso, out east off Rte. 16;
Gratiot, right off I-70; and
Granville—a beautiful little town as long as you don't mind the snobby, uppity college professor types
In my native Fairfield County (no bias here at all!

) the north and west parts of the county (outside Pickerington, which has been swallowed by the 'Burb Borg) are mostly flat and given to agriculture. Be sure to check out
Baltimore, and also
Millersport—where the annual Sweet Corn festival is coming up Labor Day weekend!
SE Fairfield Co. is very hilly; this is where Appalachia begins. Come to think of it, depending on where you work on the E. side, a commute from
Lancaster wouldn't take you much more than 45 mins. tops. Another neat place just to the SW is
Amanda.
Due south of Cols. is the awesome little town of
Circleville, which hosts the famous Pumpkin Show every October. Again depending on what part of the E. side you commute to, this might also be feasible.
In the townships surrounding any of these communities, you should easily be able to find properties of 5+ acres.
As others have stated already,
Pataskala and
Johnstown are really nice communities. Nonetheless, hungry developers are circling like vultures there and in the next 10-15 years...who knows?
