This is probably a dumb question.

I am moving from saving everything on CDs to saving stuff to 4 external drives. 2 are Seagate BackupPlus 8 TB (for photos and powerpoints). One is a MyBook and one is a Seagate Backup Plus 5 TB for other files.

I've noticed when I might plug a flash drive into my hub that all the devices get re-lettered (e.g. a Seagate that was F might become M. Driving me crazy.

Can I just rename the external drives?

Google this "win 10 assigning drive letter to external drive" and many answers, each about the same way, will magically appear. If you want to start super easy, just highlight the words in the quote, right click, and you should have an option for search google.

No need for me to repeat here how to use disk manager.

Win10 makes this super easy. In the XP days, you had to use a dos command.
