"The benefits of using a 64-bit operating system are most apparent when you have a large amount of random access memory (RAM) installed on your computer, typically 4 GB of RAM or more. In such cases, because a 64-bit operating system can handle large amounts of memory more efficiently than a 32-bit operating system can, a 64-bit system can be more responsive when running several programs at the same time and switching between them frequently."
I agree with this. It doesn't have anything to do with gaming. If you might be a demanding user - such as a person who edits many or large photos, edit video, the ability to use 4Gb of memory or more makes 64 bit the version of choice.
If you are buying a new computer - I would choose 64 bit so you don't have to upgrade later.
Practically, you're only going to find 32 bit Win7 on netbooks and other low end hardware, typically with 1-2 GB of RAM. If you step up to a machine with 4GB or more of memory, you're moving up the product line to a better computer and will automatically get 64 bit.

64 bit apps will generally outperform their 32 bit counterparts, and you may not be aware game mfg's are starting to release 64 bit versions of their games, thus the performance gains also apply just as much as they do with photo and video editing, even more so as high end gaming strains a system far more then editing photos.
64 bit is even way better for Mega Web browsing. My 32 bit XP laptop coughs on more than 18 tabbed browsers, and with 3gb memory it runs into memory leaks / problems. My 12 GB Vista 64 Desktop can handle 23 sets of tabbed browsers / a 6.49 GB memory load and I can watch Netflix and do web browsing at the same time.
