The TV in my RV has two HDMI ports with two extensions connected that run to the A/V cabinet.

The Fire stick has a male HDMI designed to be plugged into the female HDMI on the back of the TV. Due to the design of my RV that is not practical so I am left with using the male connector in the A/V cabinet that runs to the TV.

I bought one of these splitters which did not solve the problem but I may have bought the wrong one.

Would one of these solve the problem? A double female connector?

You are correct - the 1x4 HDMI splitter will not work for your purposes.
The double female connector should be what you need (assuming that the cables run to the TV are male<->male).
If you have any issues, plug something else into the cables (old DVD player, laptop, etc.) to verify the cables are working correctly.

Also, in most RV's there is a switch near the tv to use either the OTA antenna on the roof or the cables in your AV cabinet. Make sure the switch is the correct position.
