SilverSea are the smallest of the three. Seabourn is generally the least formal--although all three have formal nights.
Crystals ships carry double, triple and even quadruple the number of passengers of the ships of the other two. They are also the most traditional in pretty much every respect, and tend to have the oldest demographic of the three.
In all honesty you can't go wrong with any of them. I would figure out where you want to go, and then see which one has an itinerary which best suits your plans.
If you want a slightly more laid back atmosphere that is still in the luxury realm, take a look at Oceania and Windstar as well.
