While in St Thomas my wife and I did a walking food tour that we found online. We had a delightful time walking the downtown seeing some the "off the path" sights. We got to sample some food and drinks along the way. The tour guide told us that Puerto Rico has one as well from the same company.

Check out the forts in San Juan. Very cool!
When in St. Thomas, DH & I arranged for a snorkeling tour at Trunk's Bay in St. John. Be sure to bring your fins, mask, and a vest that will allow you to float atop the water. The sights below the water are amazing; COLORFUL coral and fish, with markers at the bottom of the sand that indicate what you are seeing as you paddle along. They also have glass bottom canoes there if snorkeling isn't your thing. The one thing I will point out: do not touch the coral with oar, fin, hand, etc., as it will kill it, according to the park rangers on the beach who keep they eye out for that.
Whatever you decide to do, enjoy it all!
