That's how I disabled my built in camera.
There can be multiple volume and on/off controls. Just because your interface is showing it as being 'off', doesn't make it so. Don't be naive

I am a programmer that is quite familiar with the unix environment. My Mac's devices are turned off. I don't use the MIC or the camera and both are turned off via a script in the startup code.

I just gave you an end user way to do that. Instead of using the built in "line in" choose another device for "line in" but don't plug in any external MIC.

The Chrome spell checker uploads everything you type online to Google for a spell check.

Yes, your cell phone, smart TV, computer, etc. can be set to spy on you. On my computer I use a headset microphone with an external on/off switch. I can just turn the mic off. They can't defeat that. I also use an earbud/mic combo on my cell phone with an on/off switch, but I don't know if disabling the built in mic is a software or hardware function.

So you happily install the same program on your phone, and you like talking to the phone to get info. However, the same program on the PC is somehow more invasive and part of a master plan to make you buy more crap.

It's software. The MIC has no onboard software of it's own..it's driven by external software at this point.

Given time though the MIC and Camera just may have onboard systems that cannot be bypassed.
