I don't dump cooking grease down the drain, I put it in a jar that I later throw away. But for good measure, at least a few times/month I release a sinkful of soapy water into the drain. I've read that helps keep the system clear. I also don't use the dispose-all.

Why not the world over?

Maybe the right (or wrong) biologicals don't exist in other places.

What's the difference, ie, between water that can "process" additional growth medium such as fertilizer and that which can't?

One can probably not take things in a vacuum just by looking at the surface.
