Good morning everyone! http://i233.photobucket.com/albums/ee109/jeannie216/halloweenmorning.gif (broken link)Well. its here, Halloween and so much to do! The pumpkins were quickly carved last night after my son's football game, which by the way, we had our butts kicked pretty bad The kids weren't in bed till after 10:30! My realtor called me yesterday and informed me of an open house while we're in Disney this weekend so, a major cleaning today along with my hair and nail appointment (necessity girls...), Halloween parade at my daughter's school http://i233.photobucket.com/albums/ee109/jeannie216/vickyhalloweenfriends-1.jpg (broken link) make tree-hanging ghosts with my daughter and then trick or treating early this evening... http://i233.photobucket.com/albums/ee109/jeannie216/050104_emm5_prv.gif (broken link) yes, there they are, my son the gangster and my daughter the angel....... So, what are everyone's plans for today? I would love to hear from everyone. Coffee with splenda and soymilk so far.... Have a great Halloween everyone.... Jeannie

Since it is Halloween (a no points day) and I was in the mood for something different, I decided to bake a cake. Just a little cake because I did not want a lot of leftovers. I found a recipe for Walnut Pound Cake, but did not have the ingredients, so I adapted the recipe to what I had in the kitchen.
My peanut pound cake:
1 cup self-rising flour
1/3 cup peanut butter
1/3 cup white sugar
1/3 cup brown sugar
1 egg
2/3 t. vanilla
1 T. cinnamon
1/3 cup fat free milk
handfull of peanuts.
Stir all ingredients together putting in peanuts last after the batter is smooth and cook in a 400 degree oven for 20 minutes.
I used the small square baking dish.
It was good, but I think more spices like ginger and allspice would have made it better.
I served it hot with fat free cool whip on top.
