Default Sunday's "so whats for dinner" food journal

Good morning! Trying to plan ahead and need some good ideas from my friends here for dinner tonight. Looking for a healthy chicken dish. Something easy? I love a pot luck meal if anyone has one. A Taebo work-out, church, then some more computer work. Whats on everyone else's schedule today? Jeannie, it's good to see you again and to have all the stress of learning done now.

Although the new stress with being back at work will come beginning May 5th But up to then I plan to be much more on CD...

No breakfast today because we got up at 10:30 a.m. and had a early lunch. I had great leftovers from yesterday evening. Pork minute steaks crusted in pepper, salt, curry, marjoram, oregano, basil and bell pepper. Fried in oil with onion cubes and bacon cubes. Then on the steaks went three slices of Mozzarella each and a slice of bacon. Then I added some veggie broth and tomatoe paste and let it cook till it was a bit thicker. If you like you can add a shot whiskey and a bit of cream to the sauce. Along with it went vermicelli nests. Very yummie....

Snack was three mini cruller with marmelade filling.

Off now to take a short walk with hubby and DS. I'm still thinking about taking my roller skates...

Jeannie, how could I forget you? I missed you all so much over the last days when I didn't have the time to look into CD.

I hope I will have at least some minutes every evening to talk to you!

Back from our little walk with DS. About one and a half mile and we needed an hour for this b/c DS always wanted to walk on our hands (he can't walk on his own yet).

Now I'm back and enjoying chocolate covered raisins. Yummie.

grilled chicken parm on whole wheat

Jeannie, I am probably too late this time, but next time try this simple meal. Hope I haven't told you this before. Just two ingredients in a 9x13 glass dish: Boneless skinless chicken tenders and a can of pineapple chunks and liquid. Just pour the whole can into the dish after arranging the chicken tenders and cook according to the directions on the chicken tender package. No need to defrost first. I usually start with a cold oven and set the timer for 1/2 hour and turn the tenders after 15 or 20 minutes. I like my food really done.

I bet walnuts would be good with this.
