does anyone know of any b&b/resort/or hotel that is nice for a weekend stay to celebrate our one year either in the metroplex area or outside (probably nothing more than a 3 hr drive from the city)

I'd do the Gaylord Texan.

Four Seasons in Las Colinas
Rough Creek in Glen Rose (about 90 min SW)
Barton Creek Resort in Austin (3.5ish hours)
Or any of the nice hotels in Uptown / Downtown - The Crescent would be my pick, but ZaZa, Ritz, Mansion, etc could also work.
Hotel St Germain is a charming B&B in Uptown

I find the Gaylord rather cheesy, but that's just me.

I've stayed at both the Adolphus and the St. Germain and loved them.

Grand Hotel in McKinney. Lots of cool places to kick around on the square and lots of yummy places to eat - including Rick's Chophouse for a fantastic dinner.

It's pricey, but The Inn at Dos Brisas, a "Relais & Chateaux" property and the only "Forbes Five Star" restaurant in the entire state.

It just really depends on what you like

Golf/Spa. I would do Four Seasons in Las Colinas
Country Music- I would do the Omni in FW and go to Billy Bobs
Outdoors- Rough Creek Lodge
Uptown- Crescent/Ritz, ZaZa.

But really, we need a price point and what you enjoy. For example, I have stayed at the Omni downtown dallas for $109.00 a night (then another $50.00 in other charges). It is a neat hotel and good with the budget. You can also find the Four Seasons at Las Colinas on sale at times.
